Mac and Cheese (Non Dairy & opt Gluten Free)

After trying a gazillion recipes, we finally decided on this one! It’s our favorite go to for a mac and cheese. It also makes a super good nacho dip!


You must have a pressure cooker and a high speed blender in order to achieve the best results.

The sauce is gluten free. So if you want to keep this recipe entirely GF then choose a GF pasta. This also makes enough “cheese” for 2 pounds of pasta! Unless of course you are making nachos……then it’s anyone’s guess.

OOOH and if you like it spicy, the green Tabasco is the best!

Best Mac and Cheese sauce! Even better than the best because it's DAIRY FREE! The cheese sauce is also GLUTEN FREE sooooo if you use a gluten free pasta you are good to go!

  • 1 Tbsp chili powder
  • 1 tsp smoked paprika
  • 2 Tbsp apple cider vinegar
  • 2 Tbsp white miso
  • 2 Tbsp lemon juice
  • 2 cups water
  • 1/2 red onion
  • 2 big cloves garlic
  • 1 cup carrots chopped
  • 1 1/2 cup gold potatoes chopped
  • 1/2 cup cashews
  • 1/2 cup nutritional yeast
  • 2 tsp pink salt
  • coconut bacon optional
  • green tobasco optional
  1. Cook pasta according to package instructions

  2. Prep ingredients 

  3. Put ALL ingredients into your pressure cooker

  4. Set on high pressure for 5 minutes

  5. Release steam and put ALL ingredients, including juice, into your high power blender

  6. Blend on high for a few minutes or until it's a creamy consistency.

  7. Pour over your pasta 

  8. Top, or not, with coconut bacon!


Most of the ingredients you MUST have or it won’t turn out “cheesy”.  However, some of the ingredients are interchangeable such as the onion and potatoes. If all you have is a yellow or white onion and say red or purple potatoes, don’t let that stop you from making this sauce. It’s all good!
