Pancakes (Non Dairy)

Ok, I know we say these recipes are all amazing but seriously they are!

 

These pancakes turn out super fluffy and you can pick the filling. It doesn’t get any better than that! I mean, who doesn’t love a great pancake?

After some serious taste testing, we’ve discovered Gia’s favorite are blueberry and Bella’s are chocolate chip. Both phenomenal of course!

 

We even make a few plain ones to give to the pets. It’s so easy and it’s just as easy to make different fillings for different people.  We always make a double recipe aaaaaand if by chance we have a few left over, we eat them again for lunch!

Pancakes (non dairy)

Super fluffy yummy pancakes!

Servings: 4
Ingredients
  • 2 cups flour
  • 2 Tbsp organic sugar
  • 1 Tbsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp ground flaxseed
  • 3/4 tsp pink salt
  • 2 cups unsweetened almond milk
  • 3 Tbsp coconut oil melted
  • 2 Tbsp lemon juice
  • Enjoy Life chocolate chips optional
  • blueberries optional
  • bananas optional
Instructions
  1. Heat pan on medium heat. We did ours on 310 degrees.


  2. In large bowl, whisk together

    2 cups milk

    3 Tbsp coconut oil

    2 Tbsp lemon juice


  3. In another large bowl, whisk together ALL dry ingredients.

    2 cups flour

    2 Tbsp sugar

    1 Tbsp baking powder

    1/2 tsp baking soda

    1 tsp flaxseed

    3/4 t salt


  4. Create a well in the dry ingredients and pour in milk mixture.

  5. Stir together until combined. DO NOT OVERMIX. A few lumps are good.

  6. Spray pan with non stick spray or coat lightly with coconut oil.

  7. Create your pancakes! Pour a big spoonful of batter into your pan.

    If you are using chocolate chips or fruit now is the time to add them to the top.You will need to cover your filling with a little more batter by pushing them down into your pancake. If you do not do this the chocolate/fruit will burn!

    Large ones take a little longer to cook. Minimum is 3 minutes. The edges will turn slightly brown and they will look firmer with popped bubbles. Flip for an additional 2-3 minutes depending on size.
